Recipe: Quick and Easy Miso Soup

Quick and Easy Miso Soup (serves 4)

 

(Probiotic, Prebiotic)

 

Just like it says, get it right every time with this do-it-yourself miso soup. You can whip this up quickly anytime - even when your local Japanese restaurant is closed.

 

·      4 tablespoons Miso paste

·      4 cups of Water

·      1 package Soba Noodles

·      2 Scallions

·      ½ block extra firm tofu

 

Add water medium pot on stove. Bring to a boil. Once it is boiling add the soba noodles and cook for 10 minutes, or according to package instructions. Turn down to simmer. Add scallions that have been chopped thinly lengthwise. In a separate bowl mix the miso with some of the hot broth from the stove. Stir well, this will help to incorporate the miso so it doesn’t clump up. Turn off the stove. Combine the miso mix into the broth. Add tofu that has been cut up into cubes. Enjoy! Pairs well with the Miso Glazed Cod.
