Recipe: Miso Glazed Cod

Miso Glazed Cod (serves 4)

(Probiotic, low-FODMAP)

The miso glaze is so tasty you might want to make extra. It tastes just as good on vegetables. Next time try it on eggplant.

·      4 – 6oz black cod filets

·      1/4 cup miso

·      1/4 cup sake

·      2 tablespoons of sugar

·      egg yolk

·      1 teaspoon sesame oil

·      2 teaspoons ginger

Prepare the glaze

Combine the sake, sugar, and miso in a small saucepan over low to medium heat. Whist in the egg yolk quickly so it the glaze maintains smooth consistency. Continue cooking until desired consistency is reached.

Prepare the fish

Wash fish fillets with water and pat dry. Preheat oven to 375 degrees. Add the teaspoon of sesame oil to a pan. Cook on high heat until the fish begins to brown, for around two minutes and then flip over. Remove the fish from the pan and place on a large baking sheet. Place in the over for around 10-12 minutes. The fish is done when it is flaky.

Top the fish with the miso glaze, and finish with freshly grated ginger for an added digestive boost.
